One of the secrets to getting that gluten free meal on the table fast is advance preparation. And I don’t mean that awful “big cooking day” some gluten free foodies talk about. If you’ve read very many books about special diets, you will find that particular nightmare mentioned more than once. I don’t do a big cooking day, nor do I do a ton of advance preparation. Just a tiny bit, because it makes the GF lifestyle easier to manage.
So, here’s one of my GF cooking cheats. Gluten free buttermilk baking mix. Just like Bisquick, but gluten free. Takes me about 5 minutes to make, but saves me a ton of time when I’m in a rush to do the morning breakfast routine. Plus, it can be used for all kinds of GF baking projects, not just pancakes. Enjoy!
Gluten Free Buttermilk Baking Mix
makes approx. 4 cups
1 package (22 oz.) Bob’s Red Mill Gluten Free 1:1 Baking Flour *
2 TBS sugar
1/2 + 1/8 tsp salt
1 TBS baking powder
1/2 tsp baking soda
1/4 cup Saco Cultured Buttermilk Blend *
Measure all ingredients into a large canister, mix thoroughly and store in a cool dry place.
Here’s the pancake recipe to get you started:
Gluten Free Pancakes
1 1/2 cups Gluten Free Buttermilk Baking Mix
2 eggs
1 cup water (use 1 1/4 cups for thinner pancakes)
2 TBS vegetable oil
Combine all of the ingredients in a small mixing bowl and whisk until smooth. Heat griddle on medium high and spray with baking spray or lightly brush with vegetable oil (unless your grill is non-stick). Pour about /4 cup batter onto hot griddle and spread batter out a bit. Turn pancake over when small bubbles form on the surface or the batter looks raised and puffy. Lightly brown both sides and serve immediately.
