Eating gluten free doesn’t have to be complicated. There are so many delicious foods that are naturally gluten free and they don’t require a ton of preparation. Take this lovely organic strawberry lemon salad for instance. Delicious, gluten free, and about 10 minutes to prepare. It doesn’t get any better than this!
Strawberry Lemon Salad:
Fill a single serving salad bowl with your chosen greens; spring mix, spinach, or 1/2 and 1/2 spring mix and spinach (I used 1/2 and 1/2 spring mix). Wash, hull, and slice 3-4 large strawberries. Add thinly sliced green onions and sliced avocado. Sprinkle with toasted, salted pumpkin seeds or other nut or seed of your choice. Dash with honey lemon dressing. Serve immediately.
Honey Lemon Dressing:
1 TBS water
3 TBS lemon juice
1/3 cup canola oil (any light vegetable oil will do)
2 tsp honey
1/8 tsp salt
3 drops lemon oil (or substitute lemon zest to taste)
dash black pepper
Whisk thoroughly until fully combined and honey is dissolved. Store leftovers in the refrigerator. This recipe is enough for about 4-6 salads.
